Dry Aged Beef
Good husbandry and feeding techniques ensure that our British Native Breeds beef offers a great natural flavour. Purpose built temperature controlled dry ageing provide the perfect conditions in which to dry age our beef on the bone. This allows our dry aged beef to develop texture and intensity of flavour using a time honoured method which produces the most spectacular results.

Dry Aged Pork
Our partnership with Dingley Dell Pork ensures that all our pork is of the highest quality. Based on the coast in Suffolk, Dingley Dell pork is reared by third generation family farmers with a deep love and respect for the countryside. To create the best flavour, we dry-age our pork for between 30-60 days depending on the cut. We find that pork loins are at their best when dry aged for 60 days and pork rib-eyes are best dry aged for 30 days.
